CFAST Seafood Composition Database Search Page

Our Seafood Composition Database contains over 3500 different entries with based on common name, latin name and preparation method. Results for this database were gathered from literature and direct tests. Not all information is available for all entries.

To search the database, enter the common name for an animal you are interested in (example: trout, blue crab, geoduck clam). The common name list will be searched for any substring containing your entry. Similarly, enter all or part of the latin name for a species and the preparation method you are interested in.

Next, check the boxes for the information you would like to returned to you. All entries matching the text you enter will be provided for each table and will include the common name(s), latin name(s) and preparation(s) in each table. If you check all the results tables, this can be quite a lot of information. The more general your search term, the more information you are likely to get in return.

Note: Information on the elements in the tables and the measurement units for each element are listed on the bottom of this page.

Note: Some elements have a low, average and high value given. When there is only one sample taken these values all will be the same. When there is more than one sample, the sample size will be given.

Amino Acids are: Lysine, Histidine, Cystine, Arginine, Tryptophan, Aspartic Acid, Threonine, Serine, Glutamic Acid, Proline, Glycine, Alanine, Valine, Methionine, Isoleucine, Tyrosine, Phenyalanine, Leucine

Cholesterol information is: Total Cholesterol and Free Cholesterol

Fatty Acids include: 10:0, 12:0, 14:0, 14:1, 15:0, 16:0, 16:1, 16:2, 17:0, 18:0, 18:1, 18:2, 18:3, 18:4, 20:1, 20:2, 20:5, 22:1, 22:2, 22:5, 22:6, 24:1

Macro Elements are: Sodium, Potassium, Calcium, Phosphorus, Chlorine, Sulfur, Magnesium

Vitamins are: Vitamin A, Ascorbic Acid, Vitamin B12, Folic Acid, Niacin, Riboflavin, Thiamine

Meaning and measurement of the values.

Moisture, Protein, Fat, Ash and Carbohydrates are percent values (%). Carbohydrates are determined by difference - the sum of the protein, fat, ash and moisture subtracted from 100%.

Calories are per 100 grams; value estimated by multiplying protein content by 4; fat by 9; and carbohydrate by 4.

Total Cholesterol, Free Cholesterol, Niacin, Phosphorus are mg per 100 grams sample.

Vitamin A is in International Units (I.U.) per 100 grams sample.

Ascorbic Acid, Sodium, Potassium, Calcium, Chlorine, Sulfur, and Magnesium are in milligrams (mg) per 100 grams sample.

Vitamin B12, Folic Acid, Riboflavin (B1), are in micrograms (µg) per 100 grams sample.

All Micro Elements are in Parts Per Million (PPM).

Amino Acids are reported as a percent of the total protein (6.25 X N).
